Two shots. Same beans, same machine, same 16 grams. One tastes like orange candy, the other like an ashtray. The difference? The grind — nothing else changed.
Here’s why grind size runs the show. Espresso is water forced through a compacted bed of coffee. The NEO Pro pushes a true 6–9 bar at the puck through a 48mm basket holding 16 grams. Grind finer, and you create more surface area and tighter passages: water slows down, contact time stretches, extraction climbs. Grind coarser and water races through, barely saying hello. Grind is your volume knob for extraction — learn it once and every bag you buy gets better.
Tip 1: Start in the espresso range, then let the 1:2 ratio be your compass
Set your hand grinder to its espresso/fine zone as a starting point — not the finest, just clearly in espresso territory. Dose 16g, run the NEO Pro’s Starting Curve (the preinfusion stage wets the puck gently before full pressure), and aim for roughly 32g of liquid in the cup in about 25–30 seconds. That’s your 1:2 ratio. Hit near it and you’re in the zone; the numbers are a map, your tongue is the destination.
Tip 2: Change one thing at a time — and write it down
Grind, dose, ratio: pick one to move. If the shot runs fast and tastes sour and thin, grind one step finer next time. If it chokes or tastes bitter and dry, go one step coarser. A phone note with three columns (clicks / time / taste) beats a perfect memory every time. Within three or four shots you’ll have that bag dialed.
Tip 3: Fresh beans and older beans want different settings
Coffee is alive. Freshly roasted whole beans are full of CO₂, which resists water flow; as the beans degas over days and weeks, shots run faster on the same setting. That’s why last week’s perfect grind feels off today — nudge it a touch finer as the bag ages. Store your beans airtight, cool, and dark (the bag they came in, resealed, beats a sunny countertop), and your setting will hold far longer.
Tip 4: Read the cup, then reach for the grinder first
Sour, salty, or watery? Under-extracted — grind finer or extend the ratio slightly. Bitter, ashy, or drying? Over-extracted — go coarser. Nine times out of ten, grind is the fix; dose is the fine-tuning. Resist the urge to change everything at once.
That’s the whole game: same 16 grams, same five-stage Starting Curve, but now you’re steering. Buy whole beans, grind just before you brew, and let the ratio guide you — your NEO Pro will do the rest.
